French Toast with Vanilla Sauce




Vanilla Sauce

1 Tbsp. Flour
4 egg yokes
1 Tbsp. Vanilla
2 C whipping cream
1/2 C. Sugar
2 scoops Vanilla Ice Cream
In a small bowl combine Flour, egg yokes, vanilla. Set aside. In a saucepan combine whipping cream and sugar. Boil over a medium heat. Stir a small amount of cream mixture into the egg mixture. Return all to pan. Stirring contantly bring to gentle boil. Cook and stir for 2 minutes. Remove from heat and stir in Vanilla ice cream until melted. Serve warm.
Prepare the Vanilla Sacue first, can be made the day before. Make french toast as usual and garnish with sliced strawberries, or berries of choice.
I made this for our Valentine's Day breakfast. It was a hit.

Chicken Alfredo

If I would have been thinking I would have taken a picture when I made it this week, but I forgot. I will try to remember to take a picture next time.
It really is YUMMY!


Chicken Alfredo

3-4 lbs boneless chicken breasts
3 C. frozen broccoli
1 C. skim milk (I use what ever I have on hand)
1/2 tsp. salt
4 C. Penne pasta or spagetti noodles
1 pkg cream cheese (8 oz and can be low fat)
1/2 C. Grated parmasean cheese

In a large pan pour milk nd broccoli, salt and pepper, heat until broccoli is crisp. Add Chicken and cream cheese. Mix until smooth. Remove from heat, stir in Parmasean cheese. Spoon over hot pasta.

I usually double this recipe because we love it so much! I make this at least 2 times a month, if not once a week!
